An authentic, true-to-style west country English bitter, recognized in England as a session beer full of flavor. A hearty base of Golden Promise with layered crystal malts offers a bready, caramelly canvas that exudes dark fruit. This maltiness is complemented by the soft, apple-fruity character provided by the traditional English yeast. The fruit is balanced by a floral hop aroma and flavor and a firm bitterness in the finish.
This is a very hop forward American style IPA. Brewed with Pale, Vienna, Munich and wheat malt for a solid base for all American hops, focusing mainly on the variety “Citra.” Citra hops are a relatively new variety introduced in 2008. It was bred as a hybrid of a number of different hops, including Hallertauer Mittelfrüh, U.S. Tettnanger, East Kent Golding, Bavarian, Brewers Gold, and other unknown hops. The resulting hop, Citra, has a distinct citrusy and tropical fruit flavor and aroma. In Citra ass down we used American Columbus for bittering and 11# of Citra at the end of the boil for late kettle addition flavor and aroma. Then we added 6 more pounds Citra and 5# Centennial post fermention for aroma. Rebrewed for your tasting pleasure!
Smooth, slightly tart, delicately hopped, and spiced with orange peel, coriander and grains of paradise.
Filled with ripe, rich fruit and a plethora of spices, this style is typified by Australian Shiraz, Sonoma Zinfandel and Châteauneuf-du-Pape.
Humanity’s path out of the Dark Age is one without end. This path carries us away from the mystical to the measurable, from the magical to the mathematical, and is a meticulous tale of progress from madness to method. Yet, we still find wonder in the Magic, and extraordinary potential in the Mystery. Out of this yearning for the old ways, Dark Age Imperial Stout emerges from the whisky barrel, its dark malt complexity and bold, yet balanced, sweetness softened by its mystical evolution in oak.
Death seems so obvious: the end of life, no mas, kaput. But Humans stand an optimistic animal. Many traditions suggest alternate endings: Resurrection, reincarnation, rebirth, afterlife. Even the atheist view of Eternal Oblivion doesn’t seem quite final. As usual, Jewish tradition prescribes… Food. 7 days of family, community, and bagels (beer!) called, Shiva, meaning “7” in Hebrew. The flip side to the 7 days of Creation with the 7th as a holy day of rest. The first meal of Shiva is “the comfort meal.” And the number 7 provides powerful mojo: 7 Jewish wedding blessings, 7 Liberal Arts, 7 stars of the Big Dipper, 7 colors of the rainbow, 7 seas, 007 license to kill, 7 dwarves, 7 deadly sins, Best of 7 finals in NBA, NHL, MLB, 7th Inning stretch. George Costanza yearned to name his firstborn, “7” as a living tribute to #7 Mickey Mantle. The 7 award however must go to the immortal George Carlin for 7 Dirty Words, inspired by another He’brew hero Lenny Bruce. To commemorate our conversion from that “dirty word” in craft to our very own crib in Clifton Park, behold DEATH (of a Contract Brewer) BLACK ALE, our Shmaltz homage to new life. Home sweet home. L’Chaim!
A Blend of 7 Ales and Lagers Aged In Bourbon Barrels and Rye Whiskey Barrels. How we made it funky for 2016. Funky Jewbelation is a blend of Jewbelation 19, Bittersweet Lenny’s R.I.P.A., Death Hoppy Black Ale, Rejewvenator ’14, Bock Bock, Messiah Nut Brown Ale and Origin Pomegranate Strong Ale. L’Chaim Sucka.
This new Imperial IPA is made with Loral, Ariana, and Ekuanot*, three very new varieties of hops and a hefty dose of lupulin powder. Using a cryogenic separation process, all the components of each hop fraction are preserved, producing two simultaneous products: concentrated lupulin powder, and debittered leaf. All that hop talk boils down to an imperial IPA that will be extra dank.
The light shines in your face from the lamp above and you answer as the truth finally hits you … “yes I want something besides an IPA”! What you really want is an Scofflaw Interrogation Milk Stout with coffee. Interrogation pours jet black with fluffy khaki head that never dissipates, sitting on top of the stout like a fluffy marshmallow. The aroma of fresh roasted coffee hits your nose like the aroma emanating from the adjacent break room. Next you are greeted with subtle notes of vanilla and rich dark chocolate after the first sip. The taste is a coffee lovers’ paradise-a cold brew medium roast with the dark malts; leading you to hints of roasty chocolate and a lingering creamy lactose sweetness. This stout may be easy drinking but upon further questioning, will you crack and order another?

A tribute to the metal band Mastodon, this farmhouse IPA balances notes of brettanomcyes with the sweet and tart notes of passion fruit creating a deliciously funky and fruity IPA. - Farmhouse IPA brewed with Passion Fruit - Brewed at D’Proef in Belgium
Our beloved coffee-infused ale gets a bit of extra love for the holidays. Bourbon soaked oak chips, orange peel, and spices take the beer to an entirely new level.
Crisp Pale Lager with a balanced avor prole from German Pilsner malt and Hallertauer hops. Refreshing and easy to drink with a dry nish.
Inspired by the House Family’s annual visit to the beautiful Hawaiian Islands our Pineapple cider is an ideal drink for tropical hot and humid climates. Our signature drink the Hawaii 5-0 is a mix of Ace Pineapple cider, coconut rum, ice and a garnish of fresh pineapple. This original cider is perfect for a backyard BBQ, or Bacon dishes.
Straffe Hendrik Quadrupel, launched in 2010, is an intense beer, dark in colour and full in taste. The aroma is elegant, spicy and slightly roasted. The sophisticated blend of special kinds of malt give the beer a complex character, combining a delicate dryness with hints of cariander, dark fruits, anise and roasted chestnuts. The palate finishes in a syrupy taste. The refermentation in the bottle creates a living beer that will evolve over the years. Straffe Hendrik Quadrupel finds an excellent partner in chocolate when it comes to foodpairing.
Scotch porter aged on bourbon chips
Named after the hops used (Vic Secret, Apollo, and Falconer’s Flight), this hazy IPA has been one of most popular beers in our Taproom. Fans have been asking us to can this beer since we started serving it in the Taproom, and we listened.
Share This is a series of beers that spotlights unique ingredients and important causes. This decadent imperial stout is inspired by mint chip flavors, recreated by adding spearmint leaves and cacao nibs to a rich base featuring chocolaty notes of its own. Share This: Mint Chip pairs perfectly with supporting Food Forward, who is chipping away at hunger relief across Southern California, reaching over 100,000 people a month with recovered fresh foods. For every bottle produced, we donate $1 to support Food Forward®, which donates fresh produce to hunger relief agencies across Southern California.
It was just a brief 100 years ago when women garnered the right to vote in our home state of New York. In a political climate like today, where pink pussyhats are a common accessory for the modern woman, we must not forget that strong female voices weren’t always accepted. In 1917, women of all New York counties marched, picketed, and protested to have their voices heard. Courageous women from across the country picketed the White House and went door to door for over a year collecting signatures of women who demanded the right to vote. These women had chutzpah! Voting rights, and easy and affordable access to women’s health services must stay a proud American tradition. Hoist this double IPA, an authentic American invention, and honor the strong women in our lives. Cheers to 100 years and beyond.
Shploing!! is out first ever beer to go into cans and we wanted to make something extra special for the occasion. A mango s’mores IPA brewed with mango, vanilla, marshmallow fluff, graham crackers, rock salt, lactose sugar and an abundance of our favorite hops.
Sneaky – Sneaky Wheat is an Imperial American Wheat. This big league wheat has the aroma of fresh wheat bread with some subdued notes of orange and a hint of spice. The taste bursts like fresh orange segments while finding that underhanded spice sneaking in the back door. The alcohol is concealed but don’t be fooled by this stealthy 8% ABV.
IPA with a sensational experience in mind from the start. It is brewed with oats and wheat for a unique malt profile built to let the hops be the star of the show. We use huge additions of Citra and Simcoe hops for a juicy and aromatic ride. Southern Juice is packaged unfiltered to deliver a hazy, hoppy, and distinctive finish.
Recreate those sour moments over the festive season. Everyone knows that point around Christmas when the mood turns sour, forced to eat the vegetables you don’t like or when there is no cold meat left for sandwiches (or vegetarian alternative if that’s your thing). We thought that the best way to re-create this was to create a Sour Winter Pale Ale, that uses a pounding of Vic Secret and then finishes it off with cherries, reminiscent of puddings at Christmas. at 5,4%, share your sour feelings with the whole family!
Sweet Josie is crafted in the American Brown style. This is a complex beer balancing a nice hop bitterness with a generous amount of chocolate and aromatic malts.
Tropicália® [American IPA] - A balanced, soft, and juicy IPA. Ripe passion fruit and citrus hop aroma lead to a full, fruit-forward hop flavor that washes over the palate, ending with subtle bitterness. Some folks say they don’t like hoppy beers, and to that we say that hops do not equal bitterness. To us, hops offer a plethora of flavors, not just bitterness; and in Tropicália it’s a beautiful, luscious, fruit journey for your palate to enjoy without fatigue.
You know the expression, “A Velvet Glove and an Iron Fist”? It was coined to refer to a regime that used a soft exterior to hide its punishingly unforgiving nature. This seems an apt description for our Velvet Glove. Its placid appearance and unparalleled smoothness hide the truth; this is one fiendishly strong stout. Rich, chocolaty espresso dominates the flavor profile, with a velvety smooth texture that will haunt your senses.
Our interpretation of a Belgian-style wheat beer is brewed with oats, malted wheat, and unmalted raw wheat for a hazy, “white” appearance. Spiced with our own special blend of coriander and Curaçao orange peel, White upholds the Belgian tradition of beers that are both complex and refreshing. Though it’s brewed in Maine, the recipe sticks to its Belgian roots. We’ve worked hard to make sure that the White in your hand tastes the same as it did back in 1995, when Rob Tod brewed the first batch.
White Label pairs two “blancs”: California-grown Muscat Blanc grapes and German Hallertau Blanc hops. Blended together in wine barrels and large oak foudres, this mixed-fermentation farmhouse ale emerges from the casks as a unique hybrid of beer and wine. The combination of white wine grapes, Monukka raisins and tropical-aroma hops create a luscious nose of ripe apricot, lychee and lemongrass. Finished with a touch of coriander and Grains of Paradise, this complex sipper is a perfect pairing for dishes like mussels steamed in coconut curry, fresh pad thai, and macadamia crusted halibut.
Dark fruit aromas of blackberry, plum, and black cherry, the toasty oak frames and adds depth. Complex notes of cocoa, cassis, pepper, and cedar.
Why "Authentica"? Because our Classic Red Sangria is authentically Spanish and uses only native Spanish grapes and natural ingredients to create deliciously bright flavors of juicy orange citrus, cherry, grape, and a touch of apple. Authentica is lower in calories, per ounce, than most Sangrias! We let the fruit make it sweet, so don't have to add very much sugar. The result is a more refreshing, easier to drink Sangria.
Gorgeous aromas of earthy mushroom and fresh raspberry are highlighted by notes of fresh violet and ripe plum. The palate expands to include a savory abundance of red currant, dark cherry, rich mocha and wild strawberry on a long, velvety finish.
This wine is purely and simply summertime in a glass. The 2015 Hogwash Rose displays a pale salmon-pink color and a beautiful and lively nose that showcases aromas of watermelon candy, red cherries, red current and rose water. Medium bodied, it has incredible vibrancy that combines with its great finish to create a wine that is both a very serious rose wine but has something for everyone.
TASTE + STYLE A touch tropical, our Chardonnay is crisp and clean, bright with balanced acidity, that lets the signature lemon-lime and a touch of apple flavors of Monterey shine through. VINEYARD + PRODUCTION Our 352 acre Shirtail Creek estate vineyard takes advantage of Monterey’s cooling fog and Pacific coastal breezes, drawn across the Gabilan Mountains into the Salinas Valley, creating an ideal climate for growing Chardonnay. The moderate temperatures lengthen the growing season, allowing the fruit to evolve with layers of distinct Central Coast flavors. Our Chardonnay is fermented and aged in stainless tanks without any oak or malolactic influence.
