Astronomical is an IPA, expressing fruit character with extremely low bitterness. Crisp layered citrus in this beer leads into a tropical mid palate and finishes with fresh juicy orange and dried orange zest notes. Soft carbonation lends to a silky, creamy body that leaves the palate clean. This beer, for us, is the vision of where we think IPAs could go, at least through the Wicked Weed lens.

Historically brewed to withstand shipment across the North Sea, Baltic porters have a long tradition of being big, chewy beers. Enchanter draws from these roots with huge notes of chocolate, dark fruit, and brown sugar from an abundance of dark malts. This robust porter was lagered for 8 weeks.
This new Imperial IPA is made with Loral, Ariana, and Ekuanot*, three very new varieties of hops and a hefty dose of lupulin powder. Using a cryogenic separation process, all the components of each hop fraction are preserved, producing two simultaneous products: concentrated lupulin powder, and debittered leaf. All that hop talk boils down to an imperial IPA that will be extra dank.
This beer came about as a result of many other brews. After homebrewing for any considerable amount of time one is sure to have an abundance of small amounts of grain and hops. What we do with these ingredients can make for both an interesting challenge and great (or not so great, depending) beer. Thankfully, this beer turned out better than imagined and has been a go to fresh and cellarable beer for some time. 7 malts are used to create this wonderfully complex Strong Scotch Ale. Notes of caramel, toasted bread, honey, dark fruits, chocolate, and roasted coffee are all prevalent. Allow it to warm to cellar temperature to experience the full flavor profile. The sweetness is balanced by a hefty but not overwhelming bitterness. This beer is the perfect complement to the coming, cool fall weather. It’s a one off so it’s going to be a very limited run.

Starting its life as a Strong Amber Ale, Kennesaw Bourbon Ale is transformed through the addition of American OakSpirals aged on Sidetrack Brand Bourbon distilled by our Kennesaw neighbors, Lazy Guy Distillery, just over a mile down the road from our brewery. The addition of the bourbon spirals delivers delicious vanilla and oak notes, while still maintaining the smooth Amber Base!
Lemon Drop dry-hopped saison is 6.8 ABV and opens with bubblegum on the nose. It’s got a rich, full body with hints of funk and clove, and finishes with notes of black pepper.
Lord Grey came to fruition with the help of our friends at The Porter beer bar who suggested the addition of tea leaves in a sour beer. We loved the idea and once our brewing team worked out the recipe the result is a refreshingly balanced 5% sour ale with Earl Grey tea. Herbal flavors abound up front with a subtle bergamot orange in the background, finishing crisp and mildly tart.
The Vienna lager was all but forgotten until 1861, when Napoleon III invaded Mexico and brought an influx of European brewers to the continent, reintroducing the style with great success. The style is defined by the malt character. Designed on a Viennese water profile, it showcases a light red to orange hue from the kilned Vienna malt gives a rich, nutty character. Light noble hop aroma and slight bitterness takes a back seat to the flavor of the malt profile. Little yeast character is contributed for a clean, dry finish.
This distinctive type of beer was originally brewed to withstand the abuses of shipping in foul weather to Imperial Russia. It was a favourite of Russian nobility whose taste for the finest food and drink was world famous. A rich flavourful brew; deep chocolate in colour with a roasted barley nose and flavour that is a complexity of malt, hops, alcohol and yeast. Fermented in ‘stone Yorkshire squares’.
This American wild ale is fermented with a Belgian wild yeast from the Senne Valley and aged in oak wine barrels with blackberries.

Quadrupel is La Trappe’s heaviest ale with a stunning amber colour. Its warm and intense flavour is rich and finely balanced. In celebration of our beautifully sunny city, this IPA was designed to be a bright as the warmest summer day. Packed with hop flavor and aroma, we double dry hop this beer with equal parts of Mosaic, Citra and Azacca, for an intensely tropical profile reminiscent of tangerine, nectar, papaya, peach, kiwi, and pineapple.

Our Tart Peach Kolsch is a fresh take on one of our very first beers. The juicy aroma and flavor of ripe peach complements the subtle fruitiness from the Kolsch yeast in this bright, refreshing ale. Add a tickle of tartness to round out the senses, and you get a new brew that’s interestingly delightful.
For us, this Old World-inspired beer is mile zero - the point at which we faithfully spin the needle on the compass and follow at will. From the warmer climates of equatorial lands, this Gose takes its tropic inspiration. Brewed with tart passion fruit and flavor-brightening sea salt, Tropicmost Gose is a roadmap of the Southern Americas. Cheer to moving until direction is found.

Because our Classic Red Sangria is authentically Spanish and uses only native Spanish grapes and natural ingredients to create deliciously bright flavors of juicy orange citrus, cherry, grape, and a touch of apple. Authentica is lower in calories, per ounce, than most Sangrias! We let the fruit make it sweet, so don't have to add very much sugar. The result is a more refreshing, easier to drink Sangria.
This wine is purely and simply summertime in a glass. The 2015 Hogwash Rose displays a pale salmon-pink color and a beautiful and lively nose that showcases aromas of watermelon candy, red cherries, red current and rose water. Medium bodied, it has incredible vibrancy that combines with its great finish to create a wine that is both a very serious rose wine but has something for everyone.
